Hospital dietitian prepares 100 servings of unique chicken galbi for husband
A hospital dietitian surprised her husband at his military cafeteria by preparing a massive 100-serving batch of chicken galbi featuring a unique sauce made with soybean paste and citron syrup.
A hospital dietitian surprised her husband at his military workplace by preparing 100 servings of chicken galbi using a unique soybean paste and citron syrup sauce. The massive meal required processing 26kg of meat, including 20kg of chicken legs, to create the specialized rice bowls.
A dietitian working at a hospital cafeteria challenged herself to cook a massive 100-serving meal for her husband. A video from 'Fun-Staurant' released by KBS WORLD TV captures the process of her visiting her husband's workplace at a military cafeteria to present a surprise meal.
Unique recipe for 100 servings of chicken galbi using soybean paste and citron syrup instead of red chili paste
The core of this dish lay in a sauce composition that differentiated it from traditional chicken galbi. Unlike standard recipes that typically use red chili paste or red chili powder as a base, this version used soybean paste as the main ingredient. Large amounts of minced garlic and ginger were added to eliminate odors, and rice wine was included to enhance the flavor of the meat.
The use of citron syrup as a "cheat key" particularly drew attention. By mixing citron syrup into the soybean paste sauce, a fragrant aroma was added. This sauce, which combines the savory richness of soybean paste with the refreshing acidity of citron, serves to balance the potentially greasy taste of the chicken. The finished sauce possessed a color and aroma reminiscent of Japanese rice bowls.
The weight of large-scale cooking: preparing 26kg of chicken legs
The scale of the ingredients required to prepare 100 servings was overwhelming. While 20kg of chicken legs were used, the total amount of meat to be processed reached 26kg when including all ingredients prepared by the cast. The process of manually preparing such a large volume of food required significant labor.
On-site, the process involved removing fat and trimming the skin from the chicken. To add a spicy "kick" for mixing the large quantity of meat all at once, Cheongyang chili peppers were added, followed by a process of tossing the meat with green onions to ensure the sauce was evenly distributed.
"Is hospital food better?" A surprise event for her husband
The meal began with a visit to the military cafeteria where her husband works. The event commenced when she asked her husband, "Is the food I make better, or is the hospital food better?" before revealing a box of prepared ingredients. The husband expressed surprise upon seeing the massive scale of the ingredients his wife had prepared.
The completed soybean paste and citron chicken galbi was prepared in a format that could be enjoyed as a rice bowl. The unique sauce combination used during the cooking process drew interest on-site as the process of completing the large-scale meal continued.
