Chef Choi Hyun-seok and writer Kim Poong showcased contrasting culinary philosophies during a special broadcast of JTBC's 'Chef & My Fridge'.
During a 15-minute special broadcast of JTBC's 'Chef & My Fridge', Chef Choi Hyun-seok restarted his noodle-making process to ensure thinness while writer Kim Poong utilized an irregular chopping method to represent his liberalist approach.
The differing culinary philosophies of Chef Choi Hyun-seok and writer Kim Poong were revealed through a special broadcast of JTBC's 'Chef & My Fridge'. The two displayed contrasting approaches as they completed their dishes in their own respective ways.
"A person must have persistence," says Choi Hyun-seok as he restarts noodle making
Chef Choi Hyun-seok focused on the process of determining the thickness of his noodles. Although he initially made thick noodles, he decided to restart the process after Seok-jin expressed a preference for thin noodles. Despite the lack of time, Choi Hyun-seok undertook the challenge to make thin noodles, stating, "A person must have persistence." He kneaded the flour dough to develop the gluten before pulling the noodles again.
The finished dish was a soup featuring tomato, tilefish, and raw shrimp. To achieve a deep flavor in the broth, Choi Hyun-seok used a method of boiling ramen to adjust the viscosity. He completed the dish by pairing the broth, which had a strong shrimp flavor, with homemade chashu. Despite changing the noodle thickness midway through, Choi Hyun-seok expressed satisfaction with the final result as he finished the dish.
"Liberalism embodied," says Kim Poong with flat dumplings and spicy noodles
Writer Kim Poong presented a dish combining "flat dumplings" and "spicy noodles." Instead of the Kajeonbyeong style of layering, he chose to make flat dumplings in a single layer, and he opted to soak the somyeon noodles in advance to achieve a chewy texture. While his knife skills appeared inconsistent during the process, Kim Poong hinted that this was his intended "liberalist" approach.
Kim Poong attempted to realize various textures by irregularly chopping the dumpling filling. His unique style was evident in how he checked the state of the dough and his method of chopping ingredients. Kim Poong continued with his own recipe amidst the competitive structure against Chef Yoon Nam-no.
Battle against Chef Yoon Nam-no: a 15-minute cooking duel
While the cooking of Choi Hyun-seok and Kim Poong was underway, Chef Yoon Nam-no engaged in a battle against Kim Poong. Chef Yoon Nam-no appeared focused on his cooking, such as making milk bread, while Kim Poong increased the tension of the match by mentioning Chef Yoon Nam-no's cooking style. Within the 15-minute time limit, the two continued their duel with starkly different cooking methods.
