During a recent episode of JTBC's 'Chef & My Fridge', national fencing athlete Oh Sang-uk chose light beer to reduce his caloric burden while managing his diet. Chef Nam Sung-Hoon won the cooking battle by preparing crab mixed noodles with sea cucumber to pair with the beverages.

National fencing athlete Oh Sang-uk revealed his personal criteria for enjoying beer even while managing his diet. During the 94th episode of JTBC's 'Chef & My Fridge', chefs competed to create dishes that pair perfectly with beer for Oh.

"I worry about calories because I exercise" Oh Sang-uk's light choices

Oh mentioned that because he exercises regularly, he is mindful of calories when managing his diet. Consequently, he stated that when drinking beer, he tends to choose "light" products to reduce the caloric burden. The broadcast featured a cooking battle themed around snacks that pair well with beer, with the cast tasting and evaluating the dishes alongside the beverages.

Fluffy fried dishes with mushroom bacon pesto and crab mixed noodles

The chefs' cooking battle continued. One chef presented a fried dish containing mozzarella cheese and mushroom bacon pesto. By using a cooking method that starts at a low temperature and finishes at a high temperature to reduce oiliness, the dish achieved a texture that was crispy on the outside like a glutinous rice twist, yet fluffy on the inside like focaccia. Oh commented on the unique acidity and fluffy texture of the leaven (natural fermentation starter) as he continued tasting.

Another chef prepared mixed noodles with crab for Oh, who enjoys noodles. Infused with a soy sauce-based seasoning, the dish included sea cucumber, yielding a flavor similar to high-end cuisine from a Chinese restaurant. Oh gave a positive reaction to the texture of the sea cucumber and the taste of the sauce, confirming that the soy sauce-based seasoning paired well with beer.

Oh Sang-uk's final choice: Chef Nam Sung-Hoon wins

After the dishes from Chef Park Eun-young and Chef Nam Sung-Hoon were completed, Oh had to decide the winner. Chef Park Eun-young presented a sauce-centered dish utilizing seafood, and Oh expressed high satisfaction with the taste and texture of the sauce. After a fierce competition, Oh concluded the battle by selecting Chef Nam Sung-Hoon as the winner of this matchup.
