According to a broadcast video from TV CHOSUN JOY, the chicken soup at this restaurant is characterized by a transparent broth without grease, unlike typical chicken soup.
Transparent broth with no grease and a 3-hour wait
The chicken soup in the video shows a broth as transparent as banquet noodle broth, and despite containing a large amount of chicken meat, it shows almost no grease. The cooking process begins every day at 5:00 AM. A chef from North Korea uses about 100 chickens a day, adding garlic and washing them clean before the process of boiling the chickens.
In particular, the chickens used are large and tough old hens. The video explains that the process of boiling them for exactly 3 hours is important to make the texture of the old hens tender. The key is the continuous work of skimming off the chicken fat that rises during the cooking process. It is emphasized that the more the grease is skimmed off, the clearer and deeper the flavor of the broth becomes.
Hand-shredded meat and the use of seasoned sauce
The chicken soup prepared every morning is served for lunch. During the cooking process, manual labor follows that machines cannot replace. The chicken meat is prepared through a process of manually shredding the meat attached to every joint of the bones by hand.
The way regulars enjoy the meal was also introduced. Using the prepared seasoned sauce, it is characteristic to enjoy half of the broth clearly, and the remaining half by mixing in the seasoning to eat it spicy. This provides an experience similar to the process of starting from the mild taste of Pyongyang Naengmyeon and moving toward the taste of spicy Bibim Naengmyeon or Hoe Naengmyeon.

The actor appearing in the video shared anecdotes regarding his past entertainment industry activities. The actor revealed his experience of living by delivering gas and attaching flyers in Seoul during a period when work was scarce. He then explained the motivation for starting his activities as a singer, which came from meeting a record producer through his acquaintance, Lee Byung-hun.
